"ONLY IN BEAUTIFUL DOWNTOWN MANSFIELD"
To most people, this just seems like a normal statement describing the location of this restaurant. However, what most people don't know, this statement leaves behind a legacy.
It all started in 2017, when a vacant, tiny building sat in the middle of the Town of Mansfield. Being used as many different venues, from a roofing company's office, to an insurance agency, to a filling station, and now today, a restaurant filled with love.
Kenny Anderson had the dream and vision of bringing this little "shack" to life. While managing a role in the busy Insurance world, Kenny still managed to find the time to bring his dream to life by working long hours and remolding the building to make it what he wanted.
Through many headaches, and discoveries, Kenny finally opened the doors in 2017. You're probably wondering, well, what makes this place so special?
Kaytie Vaughn, a single mother at the time, approached Kenny looking for a way to support herself and her three young boys. Little did Kaytie know, is that she would eventually continue a legacy. Through the years of working, Kaytie proved herself to Kenny, and Kenny then grew the trust in Kaytie to let her manage the restaurant, as Kenny was constantly out of town for his main job, as an Insurance Adjuster.
On December 26th, 2019, tragedy struck, and Kaytie was involved in a horrific tragic accident heading home that night. Leaving her with many broken bones, and almost ending her life. Kenny, being the kindhearted man that he was, led the community and rallied at her bedside, bringing an unsurmountable support wave to Kaytie. After Kaytie fully recovered weeks later, she returned back to work. Having made a post on Facebook, welcoming Kaytie back to work, he ended the post with "Only in Beautiful Downtown Mansfield"
August 10th, 2020, the Unimaginable happened when Kenny passed away peacefully in his sleep during the night. Kaytie having heard this horrible news from his wife, Michele, Kaytie was determined to make this as easy as it could for Michele in the days to come. Over the passing months, Kaytie sought after Kenny, and from the outside looking in, no one noticed a change in the way Roosters operated.
Kaytie, intrigued in the ownership of Roosters, approached Michele, and began talks of continuing Kenny's dream.
After the purchase was completed, Kaytie announced that she had purchased Roosters on her Facebook page, and purposely reminded everyone that Roosters Drive Inn was open for business, Only in Beautiful Downtown Mansfield.
